Published in 1855, Dr. Lavalle’s Histoire et Statistiques de la Vigne
et des Grand Vins de la Côte d’Or (for self-explanatory reasons we will
hereafter simply refer to it as Lavalle) contains the first
authoritative classification of the vineyards of the Côte d’Or, and
remains one of the most important books ever written about the wines of
